Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp onion powder
  • 3 tbsp all-purpose flour
  • 2 tbsp olive oil
  • ***For the Onion Gravy
  • 2 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 3 tbsp all purpose flour
  • 2 cups chicken broth
  • 1 tsp Worcestershire sauce
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • salt to taste
  • ***Garnish
  • Fresh parsley, chopped

Method
 

  1. Step 1: Season the Chicken

    Pat chicken dry.
    Season with salt, pepper, garlic powder, paprika, and onion powder.
    Lightly coat with flour.
  2. Step 2: Brown the Chicken

    Heat olive oil in a large skillet over medium-high heat.
    Cook chicken for 4–5 minutes per side until golden brown.
    Remove and set aside.
  3. Step 3: Cook the Onions

    Reduce heat to medium.
    Add butter and sliced onions.
    Cook for 12–15 minutes, stirring occasionally, until onions become soft and golden caramelized.
    Add garlic and cook for 30 seconds.
  4. Step 4: Make the Gravy

    Sprinkle flour over the onions.
    Stir continuously for 1 minute.
    Slowly whisk in chicken broth.
    Add Worcestershire sauce, thyme, and pepper.
    Simmer for 3–4 minutes until thickened.
  5. Step 5: Smother the Chicken

    Return chicken to the skillet.
    Spoon gravy over the chicken.
    Cover and simmer for 15–20 minutes until chicken reaches 165°F (74°C).
  6. Step 6: Serve

    Garnish with fresh parsley and serve hot.
