Ingredients

For the Stuffing
  • 12 cups day-old bread cut into 1-inch cubes
  • 1 lb mild Italian or breakfast sausage casings removed if needed
  • 6 tbsp unsalted butter divided
  • 1 large onion finely diced
  • 3 celery stalks finely diced
  • 3 cloves garlic minced
  • 2½ –3 cups low-sodium chicken or turkey broth
  • 2 large eggs lightly beaten
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh sage
  • 2 tsp chopped fresh thyme
  • 1 tsp chopped fresh rosemary
  • 1 tsp poultry seasoning
  • ½ tsp salt or to taste
  • ½ tsp black pepper

Method

Dry the bread.
  1. If the bread isn't already dry, spread the cubes on baking sheets and bake at 300°F until dry and lightly crisp, then transfer to a large mixing bowl.
Preheat the oven.
  1. Increase the oven temperature to 350°F and lightly butter a 9 × 13-inch baking dish.
Brown the sausage.
  1. Cook the sausage in a large skillet over medium heat, breaking it into small crumbles, until browned and cooked through. Transfer it to the bowl with the bread.
Sauté the vegetables.
  1. Melt the butter in the same skillet. Add the onion and celery and cook until softened. Stir in the garlic and cook briefly until fragrant.
Add the herbs.
  1. Stir the parsley, sage, thyme, rosemary, poultry seasoning, salt and black pepper into the vegetables.
Combine the stuffing.
  1. Add the vegetable mixture to the bread and sausage and toss gently until evenly distributed.
Add the broth.
  1. Pour in enough broth to moisten the bread thoroughly without making it soggy.
Add the eggs.
  1. Stir in the beaten eggs until evenly incorporated.
Fill the baking dish.
  1. Transfer the stuffing to the prepared baking dish and spread it evenly without packing it down too firmly.
Bake covered.
  1. Cover with foil and bake for 25 minutes.
Brown the top.
  1. Remove the foil and continue baking for 20–25 minutes, until the center is hot and the top is crisp and golden.
Serve.
  1. Garnish with additional fresh herbs and serve warm.
