Ingredients
  

  • 12 oz Pappardelle
  • 1 lb Beef ribbons or tiny diced chunks
  • 4 tbsp Butter
  • 1 tbsp Olive oil
  • 2 tsp Garlic minced
  • 1 Onion chopped
  • 2 tbsp Tomato paste
  • 1 can Tomatoes crushed, 28 oz
  • 3/4 cup Heavy cream
  • 3/4 cup Parmesan cheese grated
  • Salt & pepper for taste
  • Oregano
  • Parsley for garnish

Method
 

  1. Boil pasta al dente + reserve water.
  2. Melt butter + oil, sauté onion until soft.
  3. Add beef + garlic + tomato paste, brown until paste darkens.
  4. Add crushed tomatoes + oregano + season. Simmer 25–30 minutes until thick.
  5. Pour cream + reserved pasta water, splash.
  6. Stir Parmesan slowly, and add black pepper, then fold pasta ribbons.
  7. Garnish and serve.
