- 6 Bell pepper large, any color
- 1 lb ground beef or turkey
- 1 Onion small
- 2 Cloves garlic minced
- 1 cup cooked rice
- 1 can Tomato diced & drained
- 1 cup Tomato sauce (plus extra for topping)
- 1 tsp Italian seasoning
- 1/2 tsp Paprika
- Salt & Pepper to taste
- 11/2 cup Mozzarella or cheddar cheese shredded
- 2 tsp Olive oil
- Fresh parsley for garnish
Preheat OvenPreheat your oven to 375°F (190°C). Grease a baking dish lightly with olive oil. Prepare PeppersCut the tops off the bell peppers and remove seeds and membranes. Drizzle with olive oil and place in the baking dish, cut side up. Cook the FillingIn a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté for 2 minutes. Add ground beef, cooking until browned. Drain excess fat. Add Seasoning & RiceStir in cooked rice, diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. Cook for 5 minutes, stirring to combine well. Stuff the PeppersSpoon the filling evenly into each bell pepper.Top with a spoonful of extra tomato sauce and sprinkle with cheese. BakeCover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and slightly golden. Garnish and ServeSprinkle with fresh parsley before serving.
