  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • For the Vegetables
  • 1 pound baby potatoes halved
  • 2 cups broccoli florets
  • 2 large carrots sliced
  • 1 red onion cut into wedges
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ***Garnish
  • Fresh parsley chopped

Method
 

  1. Step 1: Preheat the Oven
  2. Preheat oven to 425°F (220°C).
  3. Line a large sheet pan with parchment paper.
  4. Step 2: Make the Honey Mustard Sauce
  5. In a bowl, whisk together:
  6. Honey, dijon mustard, whole grain mustard, garlic, olive oil, and lemon juice.
  7. Step 3: Season the Chicken
  8. Season chicken with garlic powder, paprika, salt, and pepper.
  9. Brush generously with half of the honey mustard sauce.
  10. Reserve the remaining sauce.
  11. Step 4: Prepare the Vegetables
  12. Toss potatoes, broccoli, carrots, and onion with olive oil, salt, and pepper.
  13. Spread around the chicken on the sheet pan.
  14. Step 5: Bake
  15. Bake for 30–35 minutes until:
  16. Chicken reaches 165°F (74°C)
  17. Vegetables are tender
  18. Potatoes are golden
  19. Step 6: Finish
  20. Brush chicken with the remaining honey mustard sauce.
  21. Bake for another 3–5 minutes.
