Garlic Butter Steak Bites & Potatoes

These Garlic Butter Steak Bites & Potatoes feature perfectly seared, juicy steak bites and crispy golden baby potatoes tossed in a rich garlic herb butter.

Ingredients
  

Steak
  • pounds sirloin steak cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce
Potatoes
  • pounds baby Yukon Gold potatoes halved
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
Garlic Butter
  • 4 tablespoons unsalted butter
  • 6 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon fresh thyme leaves

Method
 

Step 1
  1. Boil the halved baby potatoes for 8–10 minutes until just fork tender. Drain well.
Step 2
  1. Season the steak with salt, pepper, smoked paprika, garlic powder, and Worcestershire sauce.
Step 3
  1. Heat 1 tablespoon olive oil in a large cast-iron skillet over medium-high heat.
Step 4
  1. Cook the potatoes for 6–8 minutes until deeply golden and crispy. Transfer to a plate.
Step 5
  1. Add another tablespoon of olive oil if needed. Sear the steak bites in a single layer for 2–3 minutes per side until browned. Work in batches if necessary.
Step 6
  1. Reduce heat to medium. Add the butter, garlic, Italian seasoning, thyme, and parsley. Stir until fragrant, about 1 minute.
Step 7
  1. Return the potatoes to the skillet and toss everything together until coated in the garlic butter.
Step 8
  1. Garnish with additional parsley and serve immediately.
