Step 1
- Boil the halved baby potatoes for 8–10 minutes until just fork tender. Drain well.
Step 2
- Season the steak with salt, pepper, smoked paprika, garlic powder, and Worcestershire sauce.

- Heat 1 tablespoon olive oil in a large cast-iron skillet over medium-high heat.
Step 4
- Cook the potatoes for 6–8 minutes until deeply golden and crispy. Transfer to a plate.

- Add another tablespoon of olive oil if needed. Sear the steak bites in a single layer for 2–3 minutes per side until browned. Work in batches if necessary.
Step 6
- Reduce heat to medium. Add the butter, garlic, Italian seasoning, thyme, and parsley. Stir until fragrant, about 1 minute.
Step 7
- Return the potatoes to the skillet and toss everything together until coated in the garlic butter.
Step 8
- Garnish with additional parsley and serve immediately.
