Creamy Tuscan Salmon

Ingredients
  

  • For the Salmon
  • 4 salmon fillets (skin on or off)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 1 tbsp butter
  • For the Creamy Tuscan Sauce
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1 tsp Italian seasoning
  • 1 tablespoon lemon juice

Method
 

  1. 1. Season the salmon

    Pat the salmon fillets dry with paper towels. Season both sides with salt, pepper, and paprika.
  2. 2. Sear the salmon

    Heat olive oil and butter in a large skillet over medium heat. Place the salmon fillets in the pan and cook for 4–5 minutes per side until golden and cooked through.
    Remove the salmon and set it aside.
  3. 3. Make the garlic cream sauce

    In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
    Pour in the chicken broth and scrape up any flavorful bits from the bottom of the pan.
  4. 4. Build the sauce

    Add the heavy cream, parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 3–4 minutes until slightly thickened.
  5. 5. Add vegetables

    Stir in the spinach and sun-dried tomatoes. Cook until the spinach wilts.
  6. 6. Finish the dish

    Return the salmon to the skillet and spoon the sauce over the top.Add lemon juice and simmer for 2–3 minutes.
