Method
- Melt butter low and sauté onion 8–10 min until soft and lightly caramelized.
- Add garlic, warm 1 minute.
- Add pasta water, simmer 3–4 min until glossy and thick.
- Add Parmesan slowly, stir to melt, then fold Fettuccine in.
- Pepper-dust and plate warm.
