Classic Peach Cobbler

Sweet, juicy peaches are baked beneath a golden, buttery crust that's crisp on top and soft underneath.

Ingredients
  

Peach Filling
  • 6 cups fresh peaches peeled and sliced (about 8 medium peaches)
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of salt
Cobbler Topping
  • cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter cubed
  • cup whole milk
  • 1 teaspoon vanilla extract
Optional
  • Coarse sugar for sprinkling
  • Vanilla ice cream for serving

Method
 

Step 1
  1. Preheat oven to 375°F (190°C). Lightly butter a 9×13-inch baking dish.
Step 2
  1. In a large bowl, combine the peaches, granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, and salt. Toss until evenly coated.
Step 3
  1. Pour the peach mixture into the prepared baking dish.
Step 4
  1. In another bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
Step 5
  1. Cut the cold butter into the flour mixture until it resembles coarse crumbs.
Step 6
  1. Stir in the milk and vanilla just until combined. Do not overmix.
Step 7
  1. Drop spoonfuls of the batter evenly over the peaches, leaving small gaps for the filling to bubble through.
Step 8
  1. Sprinkle with coarse sugar if desired.
Step 9
  1. Bake for 40–45 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
Step 10
  1. Cool for 10–15 minutes before serving. Enjoy warm with vanilla ice cream.
