  • 6 Bell pepper large, any color
  • 1 lb ground beef or turkey
  • 1 Onion small
  • 2 Cloves garlic minced
  • 1 cup cooked rice
  • 1 can Tomato diced & drained
  • 1 cup Tomato sauce (plus extra for topping)
  • 1 tsp Italian seasoning
  • 1/2 tsp Paprika
  • Salt & Pepper to taste
  • 11/2 cup Mozzarella or cheddar cheese shredded
  • 2 tsp Olive oil
  • Fresh parsley for garnish

Method
 

  1. Preheat Oven
    Preheat your oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
  2. Prepare Peppers
    Cut the tops off the bell peppers and remove seeds and membranes. Drizzle with olive oil and place in the baking dish, cut side up.
  3. Cook the Filling
    In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté for 2 minutes. Add ground beef, cooking until browned. Drain excess fat.
  4. Add Seasoning & Rice
    Stir in cooked rice, diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. Cook for 5 minutes, stirring to combine well.
  5. Stuff the Peppers
    Spoon the filling evenly into each bell pepper.Top with a spoonful of extra tomato sauce and sprinkle with cheese.
  6. Bake
    Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and slightly golden.
  7. Garnish and Serve
    Sprinkle with fresh parsley before serving.
