Sweet maple, warm spices and a gentle kick of chili give this Chili-Maple Glazed Turkey a beautiful balance of sweet, savory and slightly spicy flavors. The glossy maple glaze caramelizes over the golden skin, creating a striking centerpiece for Thanksgiving, Christmas or any festive holiday dinner.
Ingredients
Method
- Remove the neck and giblets and pat the turkey thoroughly dry with paper towels. Place breast-side up on a rack inside a roasting pan.
- Preheat the oven to 325°F with a rack positioned in the lower third of the oven.
- Rub the turkey with olive oil and season evenly with salt and black pepper.
- Place the onion, orange, garlic, rosemary and thyme loosely inside the turkey cavity.
- Tuck the wing tips underneath the turkey and loosely tie the legs together with kitchen twine. Pour the broth into the bottom of the roasting pan.
- Roast the turkey until the skin begins to turn golden, tenting loosely with foil if any areas become too dark.
- Whisk together the maple syrup, melted butter, apple cider vinegar, Dijon mustard, chili powder, smoked paprika, garlic powder, cayenne and salt.
- During approximately the final 45 minutes of roasting, brush the turkey with a thin layer of glaze. Repeat every 15 minutes, allowing each layer to caramelize before adding the next.
- Continue roasting until the thickest portions of the breast and thigh reach a safe internal temperature of 165°F without the thermometer touching bone.
- Transfer the turkey to a carving board, tent loosely with foil and rest for at least 30 minutes before carving. Brush lightly with remaining cooked glaze if desired and garnish for serving.

🧊 Storage
Refrigerate leftover turkey in an airtight container within 2 hours of serving and use within 3–4 days. Freeze cooked turkey in freezer-safe containers for up to 3 months.
💡 Pro Tips
Apply the maple glaze primarily during the final portion of roasting. Maple syrup contains sugar and can darken too quickly if applied at the beginning.
Brush on several thin layers rather than one heavy coating. This creates a glossy, caramelized finish without overwhelming the turkey.
Use a meat thermometer to determine doneness rather than relying only on roasting time.
❓ FAQs
Is Chili-Maple Glazed Turkey very spicy?
No. The chili powder provides warmth rather than intense heat. Leave out the cayenne for an even milder version.
Can I make the glaze ahead of time?
Yes. Prepare it a day ahead and refrigerate it in an airtight container. Gently warm it before brushing it onto the turkey.
Can I use the glaze on a turkey breast instead?
Yes. It works beautifully on roasted turkey breast. Adjust the cooking time according to the size of the breast and cook to a safe internal temperature.
Why shouldn’t I glaze the turkey at the beginning?
The sugars in maple syrup can burn during a long roasting time. Adding the glaze toward the end allows it to caramelize without becoming overly dark.
Can I make this for Christmas as well as Thanksgiving?
Absolutely. The maple-chili glaze and festive presentation work well for either holiday.
