Ingredients

For the Turkey
  • 1 whole turkey 12–14 lb, completely thawed
  • 1 onion quartered
  • 1 lemon halved
  • 1 head garlic halved crosswise
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 6 sprigs fresh sage
  • 2 cups low-sodium chicken or turkey broth
For the Herb Butter
  • ¾ cup unsalted butter softened
  • 5 cloves garlic finely minced
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh sage
  • 1½ tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp lemon zest

Method

Prepare the turkey.
  1. Remove the turkey from the refrigerator about 45 minutes before roasting. Remove the neck and giblets, pat the turkey thoroughly dry with paper towels and place it breast-side up on a rack in a roasting pan.
Preheat the oven.
  1. Preheat the oven to 325°F and position a rack in the lower third of the oven.
Make the herb butter.
  1. Combine the softened butter, garlic, parsley, rosemary, thyme, sage, salt, black pepper and lemon zest until evenly blended.
Season beneath the skin.
  1. Carefully loosen the skin over the turkey breasts with your fingers and spread some of the herb butter directly over the meat.
Season the outside.
  1. Rub the remaining herb butter generously over the entire outside of the turkey, including the legs and wings.
Fill the cavity.
  1. Place the onion, lemon, garlic, rosemary, thyme and sage loosely inside the turkey cavity.
Prepare for roasting.
  1. Tuck the wing tips underneath the turkey and loosely tie the legs together with kitchen twine. Pour the broth into the bottom of the roasting pan.
Roast the turkey.
  1. Roast until the skin is deeply golden and the turkey reaches a safe internal temperature of 165°F in the thickest part of the breast and thigh, checking the temperature without touching bone. Tent loosely with foil if the skin browns too quickly.
Rest before carving.
  1. Transfer the turkey to a carving board, tent loosely with foil and rest for at least 30 minutes before carving.
Serve.
  1. Arrange the carved turkey on a festive platter and garnish with fresh herbs, citrus and cranberries if desired.

🧊 Storage

Refrigerate leftover turkey in an airtight container within 2 hours of serving and use within 3–4 days. For longer storage, freeze cooked turkey in airtight freezer-safe containers for up to 3 months.

💡 Pro Tips

Pat the turkey very dry before adding the herb butter. Removing surface moisture helps the skin become beautifully golden and crisp.

Use an instant-read thermometer rather than relying solely on cooking time. Turkey size, oven performance and roasting pans can all affect how quickly it cooks.

Always allow the turkey to rest before carving. This helps retain more of its juices.

❓ FAQs

Do I need to wash the turkey before roasting it?
No. Washing raw turkey can spread bacteria around the kitchen. Pat the turkey dry with paper towels instead.

Can I prepare the turkey the night before?
Yes. You can season the turkey with the herb butter, cover it and refrigerate overnight. Allow it to sit at room temperature briefly while the oven preheats before roasting.

How do I know when my turkey is done?
Check it with a food thermometer. The turkey should reach a safe internal temperature of 165°F.

What should I do if the turkey is browning too quickly?
Loosely tent the browned areas with aluminum foil and continue roasting until the turkey reaches the proper internal temperature.

Can I use the pan drippings for gravy?
Absolutely. Strain the flavorful drippings and use them as the base for homemade turkey gravy.
