Ingredients
  

For the Chicken
  • pounds boneless skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
For the Skillet
  • 2 cans 15 ounces each chickpeas, drained and rinsed
  • 1 pint cherry tomatoes
  • 1 red bell pepper chopped
  • 1 small red onion sliced
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
Mediterranean Toppings
  • ½ cup crumbled feta cheese
  • ½ cup Kalamata olives pitted
  • 2 tablespoons chopped fresh parsley
  • 1 lemon cut into wedges

Method
 

Step 1: Season the Chicken
  1. Pat chicken dry.
  2. In a bowl, combine:
  3. Oregano, paprika, garlic powder, salt and pepper.
  4. Rub seasoning mixture evenly over the chicken.
Step 2: Sear the Chicken
  1. Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
  2. Cook chicken for 4–5 minutes per side until golden brown.
  3. Remove and set aside.
Step 3: Cook the Vegetables
  1. In the same skillet add:
  2. Red onion, bell pepper and garlic
  3. Cook for 3–4 minutes until softened.
Step 4: Add Chickpeas and Tomatoes
  1. Add:
  2. Chickpeas, cherry tomatoes, oregano and basil
  3. Cook for 5 minutes.
  4. The tomatoes should begin to blister and soften.
Step 5: Return the Chicken
  1. Place chicken back into the skillet.
  2. Reduce heat to medium-low.
  3. Cover and cook for 10–12 minutes until chicken reaches 165°F (74°C).
Step 6: Finish the Dish
  1. Top with:
  2. Feta cheese, Kalamata olives, fresh parsley
  3. Serve with lemon wedges.
