
Mediterranean Chicken and Chickpea Skillet
Ingredients
Method
- Pat chicken dry.
- In a bowl, combine:
- Oregano, paprika, garlic powder, salt and pepper.
- Rub seasoning mixture evenly over the chicken.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
- Cook chicken for 4–5 minutes per side until golden brown.
- Remove and set aside.
- In the same skillet add:
- Red onion, bell pepper and garlic
- Cook for 3–4 minutes until softened.
- Add:
- Chickpeas, cherry tomatoes, oregano and basil
- Cook for 5 minutes.
- The tomatoes should begin to blister and soften.
- Place chicken back into the skillet.
- Reduce heat to medium-low.
- Cover and cook for 10–12 minutes until chicken reaches 165°F (74°C).
- Top with:
- Feta cheese, Kalamata olives, fresh parsley
- Serve with lemon wedges.
