  • 8 oz Feta cheese block
  • 3 tbsp Extra virgin oil
  • 3 Cloves garlic minced
  • 1/2 tsp Dried oregano
  • 1/4 tsp Crushed red pepper flakes optional
  • Salt to taste
  • Black pepper to taste
  • Fresh basil chopped for garnish

Method

  1. Preheat oven to 400°F (200°C).
  2. Place cherry tomatoes in a baking dish. Add garlic, oregano, red pepper flakes, salt, and pepper. Drizzle with olive oil and toss gently.

  4. Bake uncovered for 25–30 minutes, until tomatoes burst and feta is soft.
  5. While baking, cook pasta in salted water until al dente or desired tenderness. Reserve ½ cup of pasta water, then drain.
  6. Remove the baking dish from the oven and mash the feta and tomatoes together until creamy.
  7. Add cooked pasta to the dish, tossing to coat. Add reserved pasta water a little at a time if needed for a silky sauce.
  8. Garnish with fresh basil and serve warm.

🔄 Variations

Add spinach or kale after baking.

Swap feta for goat cheese if preferred.

❄️ Storage

Refrigerate up to 3 days.
